Although this is not very clear, it is a great visual to us all to understand that you cannot get a rib eye cut from the flank, etc. You can google this Angus Beef Chart from the American Angus Association for a clearer view.


Our cut sheet from the butcher will not have most of these cuts as they are just examples of what CAN come from certain parts.  We doesn't recommend overcutting due to the amount of loss when quality cuts.
